Any way to turn fields into a checklist?

I'm working with product items that are being tracked through a process. They get dumped into a smartdoc right now. I can seperate them and have them imported into their own fields.

I would very much like to be able to create a checklist using an automation. The end users need to make sure these items are all accounted for and put together, then next step can be triggered.

Any success or ideas?
