Reset Fields with an automation?

I have a "Contacts" app and a "Tasks" app in a CRM Solution.

I'd like all of my users to log all interactions for Contacts in the Tasks app, but for ease of use, I want them to be able to create/schedule the interactions within the Contacts app so they don't have to flip back and forth between the 2 solutions.

I created an automation that creates a record in the Tasks app if (and only if) the following fields are updated in the Contacts app: Status is set to "Follow-Up", "Due Date" is filled out, and "Assigned To" is completed. Works perfectly - it carries over each of these fields, including any notes that are typed up in the Comments box.

However, I'd like to reset the information in the Contacts app so there's no due date or assigned to field that remains filled out for that record. I can create a new automation that resets the Status field to the default position, but can't think of a way to get rid of the "Assigned To" or "Due Date" field status.

What's the best way to solve this?
